[JP] Tamagoyaki @ Tsukiji Yamachou 築地 山長 (Tsukiji Fish Market)


Tamagoyaki 卵焼き is a popular Japanese street food (or just food in general) and Tsukiji Fish Market has quite a few stalls. Yamachou 山長 in particular is a very popular one and I've also seen it featured in a few videos (like this one). It isn't hard to notice since there were such long queues!


While queuing, you can watch the chef make it, and it honestly takes a lot of skill and experience. If you watch them flip the egg, they don't just use the chopstick to slowly roll it up. They do some high-air pan maneuvers and then the egg just flips and folds in on itself like magic!


Their tamagoyaki pans are also very deep, and they put a lot of egg liquid, so you really get a nice and fluffy tamagoyaki.

I  believe the egg liquid is not just beaten eggs, but eggs, some stock, sugar, perhaps some mirin and dashi as well.


They sell two kinds of tamagoyaki, a sweet one (right) and not-so-sweet-but-still-sweet one (left). You can opt to have some grated daikon (radish) on top, which helps to balance the sweetness a bit.

I think I preferred the not-so-sweet-but-still-sweet one because I'm not very used to my eggs being sweet instead of savoury.


The tamagoyaki was so fluffy and so soft. It was almost like eating a cloud!

The sweetness of the Tamagoyaki is really unique, although I wasn't used to it at first. But the taste slowly grows on you, and by the time you are used to it, it's all gone! It doesn't taste egg-y at all, and instead the egg is a vehicle carrying the flavours of the ingredients added to the egg mixture.

On the other side of the shop, they also sell some other tamagoyaki that has various extra ingredients in it, like crab, eel, scallops, and onions. But I guess nobody pays attention to that.

Value

¥100/SGD1.25 for a stick of Tamagoyaki? 

Of course must get!!!!!! 

Location

Tsukiji Fish Market covers quite a large area and Yamachou is at one of the street corners. You'll probably spot it quite easily if you look out for the queues.
